Baked Mesquite Banana Bread

Makes 1 loaf (about 10 slices)

Ingredients

  • 1½ cups cake wheat flour (or 1:1 gluten-free blend)
  • ¼ cup Dune Foods baked mesquite powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • Pinch of salt
  • 3 ripe bananas, mashed (about 1¼ cups)
  • 2 large eggs
  • ⅓ cup oil or melted butter
  • ⅓ cup yoghurt or buttermilk
  • ⅓ cup brown sugar or xylitol
  • 1 tsp vanilla
  • ½ cup walnuts or pecan nuts, chopped (optional)

Method

  1. Heat the oven to 170°C. Grease and line a 22 cm loaf tin.
  2. Stir the flour, baked mesquite powder, baking soda, baking powder, cinnamon and salt in a bowl.
  3. In a second bowl, mix the banana, eggs, oil, yoghurt, sugar and vanilla.
  4. Fold the dry mix into the wet mix until just combined. Stir in the nuts.
  5. Scrape into the tin. Bake 50–60 minutes, until a skewer comes out clean. Tent with foil if the top browns too fast.
  6. Cool in the tin 10 minutes, then turn out onto a rack.

To serve
Thick slice, plain, or with butter. A dusting of baked mesquite powder on top is enough.
